Sarita's Sensations | Yogurt's Versatility
Yogurt is a key ingredient in Latin America. Alone, it makes a creamy and soothing
snack. Used in cooking, yogurt can add a distinctive taste, a creamy texture, and a
wonderful moistness to a wide assortment of dishes. It also serves as a healthy
substitute in many recipes.
Yogurt contains important nutrients such as calcium, protein and vitamin D that can
help boost the nutritional value of your dishes. Like milk, it is available in containers
labeled "fat free", "low fat," and "whole milk" or "cream top." The live and active cultures
in yogurt make it easier to digest than milk, for people with lactose intolerance. Yogurt
is also a valuable health food for both infants and elderly persons. For children, it is a
balanced source of protein, fats, carbohydrates, and minerals in a texture that kids love.
For senior citizens, who usually have more sensitive stomachs and bone loss, yogurt
can be a beneficial ingredient.

Preparation
1. In large bowl, mix dressing ingredients with fork or wire
whisk until well blended.
2. Add all salad ingredients except lettuce to dressing; toss.
Cover and refrigerate about 2 hours or until chilled. Serve
salad on shredded lettuce.
Nutrition Analysis Per Serving:
60 calories, 3g protein, 12g carbohydrates, 1g fat, 2g fiber,
250mg sodium, 0g cholesterol

Strawberry-Peach Pops
Makes 10 pops
Milk, berries, yogurt and honey whip up into freezer pops you can feel good about
serving your kids.
Ingredients
1 cup milk
1 cup fresh, or frozen strawberries
2/3 cup peach yogurt
2 tablespoons honey
10 paper cups (3-oz size)
10 craft sticks (flat wooden sticks with round ends)
Preparation
1. In blender or food processor, place milk, strawberries,
yogurt and honey. Cover; blend on high speed about 1
minute or until smooth.
2. Fill each cup with about 1/4 cup yogurt mixture. Place
cups in freezer until partially frozen, about 45 minutes.
3. Insert sticks; freeze until firm, about 1 hour 30 minutes. To
serve, remove cups.
Nutrition Analysis Per Serving:
50 calories; 1g fat; 0mg cholesterol; 9g carbs.; 1g protein; 0g
fiber; 20mg sodium

With its tangy taste and smooth texture, yogurt adds character to a wide range of dishes.
The possibilities range from simple combinations of yogurt and fruit, to savory mains
with memorable sauces. No matter what food you're making, here are just a few tips
and healthy substitutions when using yogurt:
1. Use yogurt to stand in for sour cream or mayonnaise, or in
place of oil, shortening or butter when baking.
2. Use a dollop of yogurt to tame the heat in hot salsas or
chilies.
3. Yogurt is a useful addition to marinades; its high acidity
helps tenderize meat.
4. Use low temperatures and short heating periods when
cooking with yogurt. Whenever possible, add the yogurt at
the end of the cooking period, just in time to let the yogurt
mixture come up to serving temperature.
5. To keep a thick consistency, it helps to not stir yogurt into
other ingredients-instead, fold the yogurt into the mixture.
